Ingredients 2 large baking potatoes 3 large cloves of garlic minced 1 tablespoon paprika 1 tablespoon ground cumin 1/2 teaspoon kosher coarse salt or sea salt 1 tablespoon red wine vinegar 1 tablespoon extra virgin olive oil 1 tablespoon lemon juice 1 large green bell pepper diced 4 stalks of celery diced 1 bunch of flat-leaf parsley chopped
Procedure Slice the potatoes into 1/4 inch diameters. Place them into a mixing bowl. Add the remaining ingredients. Mix well.
Put the potato mixture onto a parchment paper-lined casserole dish or sheet tray. Preheat oven to 375 degree (F). Bake covered 30 minutes. Bake uncovered 30 minutes or until potatoes are tender.
To plate Top the potato mixture with fresh flat leaf parsley and orange slices.
