2 Haas avocados, outer cover and seed removed 1/4 cup sweet onion, minced 3 garlic cloves, minced 1 poblano pepper, diced (use green bell peppers or other peppers) fresh juice of 2 limes (use a sieve to prevent seeds from getting in mix) Kosher salt to taste
In a mixing bowl, mash the avocados with a potato masher or fork until smooth. Mix in the onion, garlic, poblano pepper, lime juice, and salt.

Robert's Most Yum Hummus
2 cups cooked and mashed garbanzo beans (or two 16 ounce cans, drained) 1/2 cup of tahini (sesame seed paste) 3 clove of garlic, minced 1/4 cup fresh lemon juice (use a sieve to prevent seeds from getting in mix) 1/4 cup flat-leaf parsley (remove stems and coarse chop to yield 1/4 cup) Kosher salt to taste
Serve with crackers, pita bread triangles, Belgin endive leaves, and other snacks.

Robert's Most Yum Chili
2 packages of meatless ground burger (there are 3 packages in a box). 4 tablespoons of corn oil 1 cup of sweet onion diced 1 cup of green bell pepper diced 4 large cloves of garlic minced 1 tablespoon of ground cumin 1 to 2 teaspoons of cayenne pepper (to taste) 2 tablespoons of low salt tomato paste 1 (28 ounce) can of peeled roma tomatoes (or equivalent fresh) 2 teaspoons of sugar 2 cups of cooked red kidney beans 2 cups of water Kosher salt and freshly ground black pepper to taste
Saute the onion and green bell pepper in the corn oil until the onions are translucent. Mix in the tomato paste and cumin. Add the tomatoes and sugar. Simmer for 10 minutes. Add the meatless ground burger and simmer for 5 minutes. Add the red kidney beans and water. Simmer until done. Add Kosher salt and freshly ground black pepper to taste.
