Ingredients: 2 cups Bread cubes (optional - bread provides more bulk, but without bread is my preference!) 1 teaspoon coarse kosher salt 1 tablespoon fresh ground black pepper 2 tablespoons dried ground cumin 2 tablespoons dried ground basil leaves 4 veggie burgers (which were frozen and thawed in the refrigerator) 1.5 cups diced sweet onion 1.5 diced green bell pepper or diced mini-sweet peppers 1/4 cup hot sauce 1 cup ketchup for mixture 1/2 cup ketchup for covering the top of the loaf
Directions: 1. Pre-heat oven to 375 degrees F. 2. Combine all dry ingredients into a mixing bowl. 3. Add thawed veggie burgers, hot sauce, and ketchup. 4. Stir the mixture untils it forms a ball. 5. Remove ball from bowl and shape it into a loaf. 6. Place the loaf into a parchment paper-lined casserole dish. 7. Cover the loaf top with ketchup. 8. Bake the loaf uncovered for one hour at 375 degrees F. 9. Enjoy!
