Ingredients 2 tablespoons corn oil 1 cup Vidalia onion (or any sweet onion) diced 1 cup green bell pepper diced 2 tablespoons fresh garlic minced
4 Boca Vegan Burgers or Veggie Burgers thawed and crumbled 1 piece whole wheat bread cut into small cubes 1/2 six ounce can Hunt's tomato paste-no salt added 1 tablespoon ground cumin 1/4 cup fresh flat-leaf parsley chopped
Kosher coarse salt or sea salt to taste fresh ground black pepper to taste
1 cup Hunt's tomato ketchup-no salt added
Procedure Put the corn oil in a saute pan (or frying pan) and bring to medium high heat. Add the onion and bell pepper and saute until the onion is translucent (about 3 minutes). Add the minced garlic and saute 1 minute.
In a mxing bowl, combine the crumbled vegan burger, bread cubes, and tomato paste. Add to the saute pan and mix well and cook for 5 minutes on medium heat. Add the cumin and fresh parsley and cook for 2 minutes on medium heat.
Add salt & pepper to taste.
Line a baking sheet or casserole dish with parchment paper. Place the veggie "meatloaf" mixture onto the parchment paper and form it into a loaf. Top the loaf with the ketchup.
Bake for 20 to 30 minutes in a 350 degree (F) oven. Using a cooking thermometer, make sure the internal temperature is 160 degree (F) or higher.
Robert's Most Yum Apple Sauce
Ingredients 4 Granny Smith apples (or other cooking type apples) water to cover sugar to taste (cinnamon optional)
Procedure Peel, core, and slice the apples into large chunks. In a sauce pan, add the apple chunks and cover with water. Cook uncovered (medium heat) until apples are very soft and most of the water has evaporated. Use a whisk or spoon to stir the cooked apples into applesauce. Add sugar to taste.
