Duxelle is the French term for a mixture of sauteed mushrooms and shallots.
Ingredients
1 large poblano pepper 1 large shallot 3 large shiitake mushroom caps 1/2 cup Monterey jack cheese splash of white wine 1 tablespoon extra virgin olive oil
Procedure
Remove stem and by coring, remove seeds from poblano pepper. Steam the pepper until soft (approximately 10 minutes). Dice the shallot. Julienne the shiitakes. Saute shallots and shiitakes in the olive oil. Add splash of white wine. Remove the duxelle mixture and place into a bowl. Add the cheese and mix well. Stuff the pepper with this mixture.

Robert's Most Yum Chicken Style Wheat Meat & Dumplings
Note. wheat meat is wheat gluten also known as seitan.
dumpling mix 2 eggs (I use egg replacer mix of potato starch & tapioca flour) 1/2 cup fine dice sweet onion 1 teaspoon baking powder (aluminum free) 1/2 teaspoon salt 1/2 teaspoon ground red pepper 1/2 teaspoon dried thyme 1/2 cup milk (I use rice milk) 1.5 cups all purpose flour
2 cups of julienned chicken style wheat meat 1/2 cup all purpose flour 1/4 cup extra virgin olive oil
1 quart of vegetable stock 1.5 cups of diced onions 1.5 cups of diced green bell pepper
Procedure
Place all seasoning mix ingredients in a bowl. Add 1/4 cup of the flour to the bowl and mix well. Add chicken style wheat meat and coat pieces with mix.
Put the veggie stock in a sauce pan and bring it to a simmer.
Saute the chicken style wheat meat in the olive oil until lightly browned.
Dumpling prep Mix onions with eggs (or egg replacer) and whisk until foamy. Add baking powder and whisk it in. Add milk, salt, red pepper, and thyme and mix well. Slowly whisk in the flour.
Place tablespoonfuls of dumpling mix onto a steamer rack in a pot of boiling water for 10 minutes.
Remove dumplings and allow them to cool.
Add the onion and bell pepper to the simmering stock. Add the wheat meat to the simmering stock. To thicken the stock, remove 1/2 cup of stock and mix with 1/4 cup of flour. Then return the mixture to the saucepan. Add the dumplings and simmer for two minutes.
