4 Boca Burger Vegan Burgers 1 cup diced sweet onion 1 cup diced green bell pepper 4 large cloves of garlic minced 2 tablespoons of corn oil 1 six ounce (170 g) can of tomato paste 1 tablespoon cumin seed powder 1 cup bread cubes 1 teaspoon of thyme leaves 1/2 cup water Coarse Kosher salt and fresh ground pepper ketchup to cover top of loaf
Heat the oil in a large frying pan. Saute the onion and green bell pepper until the onions are translucent. Add the garlic and saute 2 minutes. Crumble the burgers into small pieces and add to the mixture. Add the cumin and thyme. Add the tomato paste. Pour in the water, stir the mixture, and simmer for 10 minutes. Add salt and pepper to taste.
Preheat the oven 375 degrees F. Put the mixture into a mixing bowl and incorporate the bread cubes. Form a loaf. Line a baking pan or casserole dish with parchment paper. Note. you can use cooking spray or corn oil to grease the pan or casserole dish. Place the loaf on the parchment paper. Bake 20 minutes @ 375 degrees F. Remove from oven and cover top with ketchup. Return loaf to the oven and bake another 20 minutes.
